These earthy, sweet veggie burgers are made from carrot, beet, and couscous! Carrot and beet naturally retain a lot of water, so these veggie burgers are incredibly juicy and flavorful, thanks to chili peppers and a blend of warm spices. Serve with your favorite bread and condiments.

Ingredients You Need for Spiced Beet and Carrot Burger [Vegan]

  • 1/4 cup dry whole wheat couscous
  • 3.5 ounces beet, cooked and grated
  • 3.5 ounces carrot, grated
  • 1 green chili, de-seeded and sliced very thin or crushed red pepper (adjust as per your spice levels)
  • A pinch of turmeric powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 boiled potato, grated
  • 1 tablespoons olive oil or grapeseed oil

How to Prepare Spiced Beet and Carrot Burger [Vegan]

  1. Cook the couscous in boiling water on a saucepan on medium-low heat as per the instructions on the box.
  2. Mix the cooked couscous with the grated beetroot, carrot, and spices. Taste for seasoning at this point.
  3. Just before you're ready to cook the burgers, add in grated boiled potato to bind the mixture. Form patties with this mixture. Because of the juicy beet and carrot, the mixture might still be quite wet so you may need to add some breadcrumbs or oats to help bind it. Add a tablespoon at a time.
  4. Cook on a large skillet drizzled with the oil. Cook on medium heat on each side until browned, about 5-6 minutes each.
  5. Serve on a slice of bread topped with your choice of add-ins.
