How to Prepare Pineapple Fried Rice [Vegan]
- Prepare rice according to package directions, except replace 1/2 cup of water with pineapple juice. Set aside to cool.
- Preheat oven to 400°F. Meanwhile, prepare the tofu by placing it between two clean kitchen towels and gently but firmly pressing out any excess liquid (being careful not to mash your tofu into crumbles). This step is important for your tofu to brown.
- When the tofu is completely drained of moisture (when no more liquid comes out as you squeeze it), cube the tofu into one-inch pieces and spread it out evenly on a baking sheet lined with parchment paper. Bake for 20 minutes, tossing halfway through, until tofu is golden and crispy. Remove and set aside.
- In a medium bowl, whisk all sauce ingredients together until you get a smooth consistency. Transfer the baked tofu to the sauce, stir and allow to marinate.
- Meanwhile, heat a large skillet over medium heat, then add the garlic, peas, pineapple chunks and carrots. Season with a splash of soy sauce or tamari. Cook until fragrant and carrots are slightly softened, about 2-3 minutes. Using a slotted spoon, move the tofu to the pan and cook an additional 4-5 minutes, stirring often to prevent sticking. Add the rice to the pan, add the remaining sauce from the bowl and cook for an additional five minutes. Add more soy sauce for seasoning, if desired.
- Divide between serving dishes and top with sliced green onions.
