Ingredients You Need for Sugar-Free Cinnamon Almond Ring Cake [Vegan]

For the Filling:

  • Scant 1/4 cup coconut sugar or xylitol
  • 2 teaspoons ground cinnamon
  • 1/4 cup coconut oil at room temperature or 1/4 of almond butter (preferably made with toasted almonds)
  • About a 1/4 cup toasted chopped almonds

For the Dough:

  • 2 1/4-2 1/2 cups spelt flour
  • 2 1/2 tablespoons active dry yeast
  • 2 teaspoons baking powder
  • 1/2 teaspoon of fine salt
  • 3/4 cup, plus 1 1/2 tablespoons warm non-dairy milk
  • 1 1/2 tablespoons coconut oil, melted
  • 1 tablespoon coconut sugar or xylitol

For the Optional Decoration:

  • Xylitol, ground into powder

How to Prepare Sugar-Free Cinnamon Almond Ring Cake [Vegan]

  1. In a bowl, combine coconut sugar or xylitol, cinnamon powder, and almond butter or coconut oil until paste forms.
  2. Preheat oven to 355°F.
  3. To make the dough, mix warm milk, coconut sugar or xylitol, and coconut oil in a bowl.
  4. In another bowl, mix the yeast, the baking powder, and 1 3/4 cups spelt flour.
  5. With a wooden spoon, combine the contents of the two bowls and mix well.
  6. Slowly add the remaining flour until dough comes together and is easy to handle. You may need more or less flour. Knead for 5 minutes and let stand 10 minutes.
  7. Put the dough on a sheet of parchment paper. Using a rolling pin, roll the dough out into a rectangular shape about 1/5-inch thick. Sprinkle the prepared filling over the dough and top with chopped almonds.
  8. Roll the dough into a cylinder shape. Cut in half lengthwise.
  9. Braid the two cylinders together and join the two ends to form a ring. Place on a tray lined with parchment paper and bake for 20-25 minutes.
  10. Let it cool down on a wire rack.
  11. After cooling, you can sprinkle with ground xylitol until powdered.
